Zucchini Tomato Pasta
Pasta is one of my favourite to cook mostly for dinner. I find it to be so satisfying and so easy to put together. My top favourite is tomato based ones and my sister loves her white sauce pasta a lot. Zucchini is my latest favourite veggie and i love to add it in pasta a lot because it gives the crunchy taste to it and it goes perfect with that.

Ingredients for Zucchini Tomato Pasta
- Olive Oil - 5 tbsp
- Pasta - 2 cup (any variety, i used spirals)
- Garlic - 6 cloves chopped
- Onion - 1 medium size chopped very finely
- Carrot - 1 medium size chopped very finely
- Celery - 1 medium size chopped very finely
- Tomatoes - 4 large pureed
- Zucchini - 1 large cubed
- Chilli Powder - 1 tsp
- Salt to taste
- Sugar - 1 tsp
- Tomato Ketchup - ¼ cup
- Oregano - 1 tsp
- Parmesan as needed for serving
How to Make Zucchini Tomato Pasta
- Heat olive oil in a pan, add in cubed zucchini and fry them till golden, drain to a plate.
- In the same oil, add in chopped garlic, and fry for few mins.
- Add in onions, celery and carrot. cook this till it gets golden.
- Add in the tomato puree and cook till oil separates.
- Now add in chilli powder, oregano, salt, sugar and ketchup. Mix well.
- Add in some water and simmer for few mins.
- Then add in the fried zucchini and mix well. Sauce done.
- When the sauce is cooking, you can cook the pasta in lots of boiling salted water as per package directions.
- Drain them and add it to the sauce.
- You can add some of the cooking water which you drained too.
- Top with lots of grated parmesan before serving.

Ingredients
