Vegetable Samosa Recipe | Veg Samosa Recipe

Vegetable Samosa Recipe also known as veg samosa, a crispy triangle shaped patty which is filled with spiced vegetable mixture and fried. Samosa made with vegetables makes a great party snack which will be popular among kids and adults. You can make a double batch of the samosa and freeze half of it for later just like chicken samosa and potato samosa. Learn how to make crispy veg samosa with step by step pictures and video.

Equipment

  • Deep Fry Pot

Ingredients

  • 2 tbsp Oil
  • 1 large Onions chopped finely
  • 1 tbsp Ginger Garlic Paste
  • 1 tsp Chilli powder
  • 1 tbsp Coriander powder
  • 1 tsp Garam masala powder
  • 1 tsp Turmeric powder
  • 1 large Carrot grated
  • 6 no Green Beans chopped finely
  • ½ no Capsicum | Bell Pepper chopped finely
  • ¼ cup Green Peas frozen
  • 2 tbsp Tomato Ketchup
  • 2 medium Potatoes boiled, peeled and mashed
  • 20 no Samosa Patti | Frozen Samosa Sheets
  • Oil for Deep frying

For Sealing Paste

  • 1 tbsp All Purpose Flour
  • 3 tbsp Water

Instructions

  • Heat oil in a kadai. Add in onions, ginger garlic paste and saute till golden brown. Add in spice powders and mix well. Add in grated carrots and vegetables and cook till raw smell leaves. Sprinkle in salt, tomato ketchup and mix well. Add in boiled potatoes and combine. Finally add in coriander leaves and mix.
  • Mix flour with water to make a thick paste. This is used for folding of the samosa. Set this aside till needed. Instead of this, you can even use a egg to seal the samosa.
  • Take a samosa sheet, spoon in the filling. Fold it like a samosa (check image) for reference. When you come to the end apply a paste of flour and shape like samosa. Place the shaped samosa on a plate. Repeat this with the remaining samosa patti. You can fry the samosa immediately or store in container in freezer until needed.
  • Heat oil for deep frying. Drop samosa in and fry on medium high heat till golden brown and crispy. Strain using a slotted spoon and serve with ketchup.

Notes

  • You can use any vegetables of choice in this. You can use green beans, green peas, cabbage, cauliflower in this. Make sure you chop the vegetables finely before cooking. 
  • The filling can be made a day in advance. Store in fridge and reheat later. 
  • You can add cooked chicken in the filling if you want non veg. 

Storage & Freezing

If you are planning to freeze the samosa. Place the shaped samosa in a sheet of parchment paper. Freeze overnight. Once frozen, collect the frozen samosa in a ziploc bag and store in freezer till use. You can fry straight away from freezer, no need to thaw.

Air Frying & Baking Veg Samosa

For Air frying, brush the shaped samosa with oil on both sides. Place it in the greased air fryer basket. Place it inside a 180 degree C air fryer and bake for 12 to 15 mins, flip in between half way through.
For Baking, brush the shaped samosa with oil on both sides. Place it in a parchment lined baking tray. Bake for 15 to 20 minutes in a 180 degree C preheated oven till crispy. Serve.
