Spicy Diamond Cuts Recipe, also known as Maida khara biscuits or kala kala is an easy and simple snack made with plain flour, spice powders, ajwain and cumin seeds. Diamond cuts is traditionally made sweet and spicy as per your preference for festive occasions like Diwali or to just serve with a cup of masala chai. Ingredients

  • 1 cup All Purpose Flour
  • 2 tsp Chilli Powder
  • 1 tsp Salt to taste
  • ½ tsp Ajwain / Carom Seeds / Omam
  • ½ tsp Cumin Seeds
  • ¼ tsp Asafoetida
  • 1 tsp Oil for Deep frying
  • Water as needed
  • 1 tsp Chat Masala Optional

Instructions

  • Take flour, salt, chilli powder, ajwain, cumin, asafoetida in a bowl. Mix well. Add in water and mix well. Heat a tsp of oil till smoking and pour that into the dough and knead well. Rest it for 30 mins.
  • Now divide it into equal portions. Take a dough and roll it into a thin sheet. The sheet should be really thin. Now use a pizza cutter or a knife and cut diamonds from it. Separate them.
  • Heat oil for deep frying and drop these in hot oil. Fry till golden. Strain it into a bowl, sprinkle with chat masala if needed. Serve.

Notes

  • You can use whole wheat flour instead of plain flour. Or for better texture you can use half wheat and half plain flour. 
  • You can add any spice mix into the dough like garlic powder, cumin powder or chaat masala powder. 
  • Add sesame seeds when making dough for crunchy texture. 
  • Add a spoon of ghee or butter into the flour when making dough. 
  • Take care when frying diamond cuts. Make sure to fry on high heat so it gets crispy. Also don’t over fry, else it may burn. 

Storage and Serving

Spicy diamond cuts can be fried stored in an air tight container upto 3 to 4 days. Enjoy diamond cuts hot with a cup of tea or coffee.
