Preheat oven to 200 degree C. Take a baking pan and place onion slices over it. Set aside.
Mix all the herb butter ingredients together and set aside.
Take chicken and use your fingers to separate the skins from it. Now put half of the herb butter in and massage it all over it so it spread evenly. Now put onions, lemons, garlic inside the cavity of the chicken. Place the chicken over the bed of onions. Now place the remaining butter over it and spread evenly.
Now tie the legs with a thread and place the potatoes around the chicken and pop it into the oven and bake for 1 hour and 30 mins. Remove it from oven half way through the cooking time and take the juices from the pan and pour it over the chicken. do this two times.
Now remove it from oven and set aside for 20 mins. Now slice and serve.
