Heat oil in a nonstick kadai. Add in mustard, urad dal, curry leaves and asafoetida. Add in onions, green chillies, salt, turmeric and saute for 2 mins or so till translucent.
Add in potatoes and toss well. Cook till it gets crispy and well roasted. It will take around 10 minutes. Add in chilli powder and mix well. Roast for few more mins. Serve.
