Onion Chicken Fry is a delicious and popular dish where chicken is cooked with a lot of onions and a blend of traditional spices. This chicken fry recipe tastes like deep-fried chicken but with a healthy twist. This recipe uses only a little bit of oil making it a healthy chicken fry. The easy-to- follow recipe can be prepared in just 30 minutes making it perfect for a quick lunch recipe.

Ingredients

For Marinating Chicken

  • ½ kg Chicken bone-in
  • 1 tbsp Kashmiri Chilli powder
  • 2 tbsp Coriander powder
  • 2 tsp Garam Masala Powder
  • 1 tsp Turmeric Powder
  • Salt to taste

For Masala

  • 3 tbsp Coconut Oil
  • 1 tsp Cumin Seeds
  • 4 large Onion peeled & finely chopped
  • 3 no Green Chillies slit
  • 3 tbsp Ginger Garlic Paste
  • ½ cup Coriander Leaves finely chopped
  • 1 tbsp Lemon Juice

Instructions

  • Marinate chicken with the listed ingredients and leave it to marinate for 30 mins.
  • Heat oil in a nonstick kadai. Crackle in some cumin seeds and fry for a min. Now add in onions and green chilli. Fry them for 5 mins. Till it turns light golden.
  • Now add in ginger garlic paste and fry till the onion is well browned. Make sure the onion is golden, because that what gives good colour to the curry.
  • Now add in the marinated chicken and mix well. Cover with a tight lid and cook on a very low flame for a good 30 mins to 40 mins stirring in-between as you go.
  • Now open the lid and increase the heat. Dry up the chicken, this will make the masala stick to the chicken and get fried.
  • Add in tons of coriander leaves and lemon juice to taste. Mix well and serve.

Notes

  • Marinating the chicken over night with spices and salt helps to tenderize the chicken, which allows it to absorb more flavor, and reduces the need for excess oil while cooking.
  • Caramelizing onions adds a natural sweetness and rich flavor to the dish. Cook the onions on low heat until they are golden brown to enhance the taste.
  • Using Coconut oil are healthier than regular vegetable oil which provide extra nutritional benefits.
