Mango Cake Recipe (Glazed Mango Cake)

The cake is prepared using all-purpose flour, sugar, butter, baking powder, eggs and mangoes. The king of fruits ‘mango‘ never disappoints and makes this cake quite special. Equipment

Ingredients

For Mango Cake Batter

  • ½ cup Unsalted Butter 110 grams
  • ¾ cup Sugar 150 grams
  • 1 tsp Vanilla Extract
  • 2 large Eggs
  • ¾ cup Pureed Mangoes
  • cup All Purpose Flour (Maida) 210 grams
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • tsp Salt
  • ½ cup Milk 120 ml

FOR MANGO GLAZE:

  • ½ cup Pureed Mangoes
  • ¼ cup Sugar

Instructions

  • Preheat oven to 180 degree C. Grease a pan with butter and dust with flour. Coat on all sides and set aside.
  • Take flour, baking soda, baking powder and mix well.
  • Take butter, sugar, salt and vanillla in a bowl and mix well till creamy. Add eggs and whisk till creamy. Add mango puree and fold gently.
  • Add in half of the flour mix and mix gently. Add in milk and fold gently. Now add in other half flour and fold gently.
  • Spoon it into the prepared pan and bake for 35 to 45 mins. Remove and cool it in the pan for 5 minutes. Now un-mould the cake and let cool completely.
  • Now make the glaze. Take mango puree and sugar in a sauce pan and heat till it is melted and bubble up. Now spoon the sauce all over the cake and set aside for 1 hour.
  • Slice and serve.

Notes

For a perfect mango glazed cake recipe, follow these tips and tricks:
  • Always measure and weigh the ingredients for baking using kitchen scale.
  • Sieve and add the dry ingredients with the wet ingredients mixture.
  • The butter, egg, milk and mango should be at room temperature.
  • Grease the baking tray with butter on all sides and dust them with all-purpose flour / maida.
  • After baking, insert a toothpick in the centre of the cake. If it comes without any batter, then it is perfectly baked. If not, bake it again for a few minutes.
  • Cool the cake completely, before Slicing.

Storage and Serving

The mango glazed cake can be stored in an airtight container and refrigerated for a week. I have added mango puree glazed on top. For variation, you can even put melted chocolate sauce on top.
