Equipment

Ingredients

For Cooking Chicken & Making Stock

  • ½ kg Chicken with bone in
  • 1 tsp Turmeric Powder
  • 1 tsp Salt
  • 1 litre Water

For Soup Base

  • 1 tbsp Oil
  • 1 tbsp Ginger peeled & minced
  • 1 tbsp Garlic peeled & minced
  • 2 no Spring onion white part chopped finely
  • 1 medium Carrot shredded
  • 1 cup Cabbage shredded
  • 1 stick Celery shredded
  • ½ no Green Bell Pepper shredded
  • 1 tbsp Soy Sauce
  • 2 tbsp Red Chilli Garlic Paste
  • 2 tsp Vinegar
  • 1 tsp Salt Sugar, Pepper to taste
  • 1 no Egg

For Cornstarch Slurry

  • 2 tbsp Corn Starch
  • 4 tbsp Water

For Garnishing

  • 1 cup Egg Noodles boiled
  • 2 no Spring Onions green part chopped finely

Instructions

  • First make  the chicken stock. Take a pressure cooker add chicken along with some turmeric powder and salt. Add lots of water and pressure cook it for 3 whistle. Now let the pressure go all by itself. Open the pressure cooker and filter the stock. Now remove the flesh from the chicken and set aside.
  • Now heat oil in a deep pot. Add in ginger, garlic, spring onion white and saute for couple of mins. Add in the shredded veggies and cook for 5-10 mins till the raw smell goes away. Now add in red chilli paste, soy sauce, vinegar, salt, sugar, pepper and mix well. Pour the chicken stock in this and mix well. Bring this to a boil. Now add in the cooked chicken and mix well.
  • Now mix cornstarch with some cold water and pour that into the soup. Now the soup must have thickened. Now beat eggs and pour it over the soup while mixing constantly. This will make the egg form into threads. Soup is ready.
  • for making fried noodles. Add boiled noodles into hot oil and fry till crispy. You can crush them coarsely before topping the soup.
  • Ladle the soup into some bowls. Sprinkle some fried noodles over it with some spring onion greens. Serve hot.

Notes

  • Instead of using raw chicken, you can use leftover cooked shredded chicken and store bought chicken stock or chicken boullion cubes.
  • Any vegetables can be used, make sure to chop it finely.
  • If you are making vegetarian soup, skip the chicken stock and use veg stock instead.
  • Tofu can be used in the soup.
