Thanksgiving is around the corner. it is one of my favourite holiday. There is nothing more satisfying than cooking wonderful foods for your loved ones and enjoying the day with the people you love. I have created a whole lot of menu for this thanksgiving. I have been sharing it visually with you all week long.

We are not into turkey, so it is always a roast chicken. That too this special roast chicken which i have been making it for years. My fool proof recipe is this one. I have been giving ideas all week long for the recipes you can make this thanksgiving.
About Roast Chicken
Roasting a whole chicken can feel intimating for many. But it is actually very easy to make. You can do few minutes of preparation to the chicken and leave it to bake without baby sitting. There are few crucial steps to get the perfect juicy and crispy roast chicken.
Herb butter is what makes the roast chicken perfect. Roast the chicken with skin for best taste and texture. Herb butter is made with lots of butter, herbs, spices and dried herbs.

Roast Chicken Ingredients

Whole Chicken - Use medium to large chicken with skins on. It makes the chicken juicy without drying. The chicken skin gets crispy which makes it tasty.
For Stuffing - I used lemon, garlic, onion and herbs to stuff inside the chicken.
For Layering Baking Tray - I used onion and potatoes for layering the baking tray. So when the chicken bakes, you get roast potato as well.
Herb Butter - use butter, dried herbs, paprika, salt and black pepper powder for flavouring.

How to Make Roast Chicken (3 Easy Steps)
Pre-preparation - Preheat oven to 200 degree C. Take a baking pan and place onion slices over it. Set aside.
Chicken Prep - Mix all the herb butter ingredients together and set aside. Take chicken and use your fingers to separate the skins from it. Spread butter over chicken.
Baking Chicken - Nplace the potatoes around the chicken and pop it into the oven and bake for 1 hour and 30 mins. Remove it from oven half way through the cooking time and take the juices from the pan and pour it over the chicken. do this two times. Remove it from oven and set aside for 20 mins. Now slice and serve.

Ingredients
- 1½ kg Whole Chicken with skin about 3 pounds
- 1 large Onion chopped with skins on
- 1 bulb Garlic whole bulb cut in half
- 1 large Lemon cut in half
For Layering Tray
- 4 large Potatoes cut into chunks
- 2 large Onion cut into thick slices
For Herb Butter
- 100 grams Butter
- 3 cloves Garlic peeled & grated
- 2 tsp Ground Paprika
- 2 tsp Dried Oregano
- 2 tsp Dried Rosemary
- 3 tbsp Fresh Parsley chopped finely
- 2 tsp Black Pepper Powder
- Salt to taste
Instructions
- Preheat oven to 200 degree C. Take a baking pan and place onion slices over it. Set aside.
- Mix all the herb butter ingredients together and set aside.
- Take chicken and use your fingers to separate the skins from it. Now put half of the herb butter in and massage it all over it so it spread evenly. Now put onions, lemons, garlic inside the cavity of the chicken. Place the chicken over the bed of onions. Now place the remaining butter over it and spread evenly.
- Now tie the legs with a thread and place the potatoes around the chicken and pop it into the oven and bake for 1 hour and 30 mins. Remove it from oven half way through the cooking time and take the juices from the pan and pour it over the chicken. do this two times.
- Now remove it from oven and set aside for 20 mins. Now slice and serve.
