Pudalangai Poriyal Recipe
Snake gourd is one of my most hated vegetable. But this Poriyal has totally changed my mind. It is sweet, spicy and taste great with any gravy of your choice. You can check out my snake gourd bhajji too. I hope you will try this and let me know what you think.
How to Make Snake Gourd Poriyal Recipe
- Heat oil in a kadai. Add in all the seasoning ingredients and let it crackle for a min.
- Add in onions and saute for a min till it turns translucent.
- Add in chopped snake gourd and saute for a couple of mins.
- Add in salt and sambar powder and saute well.
- Pour in a splash of water and cover the pan. Cook this for 5 -10 mins till the snake gourd is cooked.
- Now remove the lid and saute the poriyal on high heat for 5 mins.
- Serve with rice and any curry of your choice.

Pudalangai Poriyal Recipe | Snake Gourd Poriyal Recipe
Ingredients
- Snake Gourd / Pudalangai - 1chopped finely around 3 cups
- Onion - 1 small chopped finely
- Sambar Powder - 1 tblspn or to taste
- Salt to taste
- For Seasoning:
- Oil - 2 tblspn
- Mustard Seeds / Kaduku - 1 tsp
- Urad dal / Ulundu Paruppu - 1 tsp
- Dry Red Chilli - 1
- Curry leaves - 1 spring

Hi i tried this, after cooking the snake gourd is not edible, it looks raw. So i poured more water and boil it for some more minutes, i tried this for 3 times. Then only the snake guard becomes edible. And the pan also get more heat and sides of pan becomes black, due to that the taste goes down. Can you suggest what i need to do for making the snake gourd edible. Thanks for your nice post. Really it will help the peoples like me.

@AnonymousSnake gourd doesn't need much time to cook at all. Just 10 to 12 mins is enough. Try to get tender gourd. And if your pan turns black, then you should use a thick bottom pan. Dont cook this on a high heat, use low to medium heat alway, so the vegges cooks slowly and perfectly.
