Coconut Basbousa Recipe with step by step pictures. The main ingredient of this cake is semolina and coconut. It is mildly sweet and after baking it is soaked in sugar syrup which is flavoured with rose syrup.
Eggless Coconut Basbousa
I came across this recipe just a few weeks ago. I have seen this in cooking shows and in many other cooking blogs. Really wanted to try this recipe, but many of this recipe has eggs in it. Wanted to try it without eggs, so modified the recipe accordingly and tried it. It came out pretty good. The taste of this was more like a firmer version of a south Indian sweet called as kesari with some taste different.

About Coconut Basbousa Recipe
This recipe is originally from Egypt. You can add some almonds on top of the cake too. The cake has a lovely aroma of rosewater, saffron and cardamom. I tried it warm as well as cold, but i liked it more when it is warm. I added fresh coconut in this, but if you want to store this for some more days add desiccated coconut. If you add fresh ones it will get spoiled soon.
Ingredients for Coconut Basbousa Recipe
Dry Ingredients:
- Fine Semolina / Fine Rawa - 1 cup
- Coconut - 1 cup
- Flour - ½ cup
- Sugar - ¾ cup
- Baking powder - 1 tsp
- Saffron - a pinch
- Cardamom powder - 1 tsp
- Salt - ½ tsp
Wet Ingredients:
- Yogurt - 1 ½ cup
- Butter - ½ cup melted
For Syrup:
- Sugar - ½ cup
- Water - ½ cup
- Rose Water - 1 tsp

How to Make Eggless Coconut Basbousa
- Grease a 20 x 20 cm pan with butter and set aside. Preheat the oven to 170 Degree C / 350 Degree F.
- Take all the dry ingredients in a bowl. Mix well.
- Now add in yogurt and butter in it and mix well.
- Pour this in a greased pan and bake it for 45 to 50 mins.
- Remove it from oven and cool it down. Cut this into slices.
- Now make syrup. Take sugar and water in a sauce pan and heat it till it is melted. Simmer for 5 mins.
- Remove this to a bowl. Add in rose water and mix well.
- Pour this over the cake and let it soak, allow it to cool down.
- Serve.

Do mention the temperature for oven setting. I baked mine at 180 degrees centigrade and it turned fine.

This will be just a suggestion for you... So many people have milk & gluten allergies, me being one of them. I also have type 2 diabetes. So, I will suggest a few items for you to try if you want to. Sugar and honey are a no-no for diabetics. There is a no glycemic sugar called Monk Sweetener. Perfect for diabetics.
There are many milk substitutes. And finally, Bob's Red Mill has gluten-free flour as well as many other products.
