My love for anything chocolate never stops. This cookies is a proof for that. Because one day I saw this recipe in my reader list and believe it or not, the next minute I am with a pen and a paper writing down the ingredients for it to make it instantly.

I am telling you this is one of the best cookies I have ever made and tasted. This is not like your normal cookies. It is fudgy and chewy and very soft, not to mention extremely chocolaty. When I took my first bite I felt like eating a chocolate heaven and the texture was like chocolate brownies in cookie form. This cookies has become my latest favourite and I loved it so much, I finished the entire batch in two days.

The name clearly tells you what to expect from this cookies. This brownie cookies is next level cookie recipe which is too delicious to resist with just one. The recipe uses chocolate over loaded, butter, plain flour, brown sugar and egg. The texture of the cookies is almost similar to a brownie but has crisp and chewy texture like a cookie.

Brownie Cookies Ingredients
PS: The main image which you see is shot during my first attempt of making this cookies. I re-made the recipe recently, thats when I took ingredient shot and video for you. I used semi sweet chocolate chips alone and not chocolate chunks.

Chocolate - I used semi sweet chocolate chips. but in the main image you can see I have used some chocolate chunks too. This ingredients picture, video and step wise images uses just chocolate chips,
Butter - I used unsalted butter which I used to melt with chocolate.
Egg - you need egg for this cookie to get the perfect texture. I haven't tried this recipe without eggs.
Brown sugar - this is what used in the batter to get the perfect chewy texture in the cookies.
Vanilla Extract - use pure vanilla extract for maximum flavour.
All Purpose Flour - I used plain flour for the cookie batter. You can use whole wheat flour for the cookie batter too.
Baking Powder - use little bit of baking powder, which adds perfect texture to the cookies.
Salt - a little amount of salt, enhances taste of the cookies.

Brookies Easy Steps
Melting Chocolate - Take chocolate and butter in a microwave safe bowl. Place it in microwave and melt for 20 seconds. You can melt it by placing this bowl over a pan of simmering water. Once chocolate is melted, remove it from microwave, give a good mix until chocolate is smooth and set aside so it cools a bit.
Making Brookies dough - Take egg in a bowl. Add in brown sugar and vanilla. Beat it well till it is all mixed up. Pour melted chocolate in this and mix well. Add in baking powder, salt and mix well. Sprinkle in plain flour and combine until a thick batter is formed. Add in ¾ cup of chocolate chips and mix the batter. Reserve few for topping the cookies.Place this bowl in fridge for 15 mins.
Before Baking - Take a baking tray, line it with parchment paper. Scoop some of the batter using an ice cream scoop and place it over the tray. Leave distance between each cookie. Now take the remaining chocolate chips or chunks and dot it all over the cookies. Place this tray in freezer for 10 to 15 mins till the cookies get rock hard.
Baking Cookies - Preheat oven to 170 Degree C. Now pop the tray straight into the oven and bake for 16 mins. Remove it from oven and let it cool on the tray before removing it carefully using a spatula. Enjoy it warm.

How to Make Chocolate Fudge Cookies (Stepwise Pictures)
Melting Chocolate & Butter
1) Take chocolate and butter in a microwave safe bowl. Place it in microwave and melt for 20 seconds. You can melt it by placing this bowl over a pan of simmering water.

2)Once chocolate is melted, remove it from microwave, give a good mix until chocolate is smooth and set aside so it cools a bit.

Making Brookies Dough
3)Take egg in a bowl.

4)Add in brown sugar and vanilla.

5)Beat it well till it is all mixed up.

6)Pour melted chocolate in this and mix well.

7)Mix until it becomes like this.

8)Add in baking powder, salt and mix well.

9)Add in plain flour and combine until a thick batter is formed.

10)The dough will be like a thick batter.

11)Add in ¾ cup of chocolate chips and mix the batter. Reserve few for topping the cookies.

12)Once the dough is made. Place this bowl in fridge for 15 mins.

Scooping Cookies
13)Once you take from fridge. The dough will be slightly firm.

14)Take a baking tray, line it with parchment paper. Scoop some of the batter using an ice cream scoop and place it over the tray.

15)Leave distance between each cookie. Now take the remaining chocolate chips or chunks and dot it all over the cookies. Place this tray in freezer for 10 to 15 mins till the cookies get rock hard.

Baking Cookies
16)Preheat oven to 170 Degree C. Now pop the tray straight into the oven and bake for 16 mins. Remove it from oven and let it cool on the tray before removing it carefully using a spatula. Enjoy it warm.

You can. But it will affect the texture.
