About Beetroot Pulao
A pulao is a one-pot dish made with rice, vegetables, or protein and aromatics (onions, garlic, ginger, etc.), spices, and herbs. A pulao can be made in a variety of ways.
This beetroot pulao is made with basmati rice, beetroots, basic spices and seasonings. It taste so delicious and is perfect to pack in lunch box. Serve hot with raita or a refreshing salad like kachumber salad.

Beetroot pulao Ingredients
Basmati Rice - To attain the best results, the basmati rice should be fragrant and long-grained. The best results will come from aged basmati rice. Even though I prefer to use basmati rice, but any variety of rice can be used. You can adjust the water level accordingly.
Beetroots - Beetroots are high in fibre, vitamins, and iron, and are a good source of these nutrients. It adds a wonderful sweet taste and colour to your pulao.
Spices - whole spices like cinnamon, cardamom and fennel adds aroma and flavour
Onions - thinly sliced onions is sauted in oil or ghee to form the base. It adds unique aroma and taste to the dish.

Equipment
- Pressure cooker
Ingredients
- 1 cup Basmati Rice
- 1 large Beetroot peeled and chopped finely
- 1 large Onion sliced thinly
- 1 tbsp Ginger Garlic Paste
- 1 tsp Chilli powder
- 1 tbsp Coriander Powder
- 1 tsp Garam Masala Powder
- 2 tsp Sat to taste
- 1 cup Milk or Coconut Milk
- ½ cup Water
- ¼ cup Coriander leaves finely chopped
For Tempering
- 1 tbsp Ghee
- 1 tbsp Oil
- 1 tsp Fennel Seeds
- 1 tsp Cumin Seeds
- 1 piece Cinnamon
- 1 no Bay Leaf
Instructions
- Wash and soak rice for 30 mins. Strain it and set aside.
- Heat ghee and oil in a pressure cooker, add in whole garam masala and let them sizzle. Add in onion and saute till golden brown. Add in ginger garlic paste and saute for a min. Now add in beetroot and saute for 5 mins till raw smell leaves. Add in spice powders and mix well.
- Now add in the soaked and strained rice and mix well for 2 mins. Now add in water, milk, coriander leaves and mix well.
- Bring it to a boil and cover and pressure cook for 1 whistle, simmer for 5 mins. Turn off the heat and let the steam go all by itself. Now open the lid and fluff the rice with fork. Cover again and set aside for 10 mins. Now serve.
