Egg kothu parotta is one of my favorite recipe ever. I make this whenever i have leftover parotta. This particular version is thattu kadai muttai parotta recipe. This is similar to street style parotta stall muttai kothu parotta.

About Egg Kothu Parotta
Kothu parotta is the famous street food item over here. I love this dish so much. It is a dish that you want to prepare when you have leftover parotta last night. Just tear those, add some onions and stuffs, crack open two eggs mix it up and eat it (Don’t forget the spices). If you have ever seen on those street shops they will prepare like the above method, but they will pour a little of that lovely salna in it, it will give a unique taste to this dish. You could also add any chicken curry to this.
If you want chicken kothu parotta just add sliced up chicken after frying the onions and continue the process from that on. You could also make your own parotta.

Egg Kothu Parotta Ingredients

Onion & Tomato - like most recipes onion and tomato is one of the main ingredient. I like to chop them finely so it combines evenly into the dish. I like to reserve some of the chopped onions to sprinkle in the end which provides a crunchy taste.
Green chilli - chilli is for flavour and spiciness. You can skip it or add more as needed.
Ginger Garlic paste - I use equal amount of ginger and garlic which is ground into a paste for flavour.
Whole spices - I use little fennel seeds and cinnamon to provide the fresh aroma.
Spice Powders - Red chilli powder and very little garam masala powder is added for flavour and taste.
Eggs - You can add as much egg as you like. I like my kothu parotta with lots of egg. Make sure to cook them really well so the egg is completely cooked through.
Paratha / Parota - I use leftover parotta. You can opt for homemade or storebought. Frozen parotta is best option as well.
Salna - for getting the authentic street style taste, you need to use leftover salna or chicken curry.

Tips for Hotel Like Kothu Parotta
Here is a hack to achieve fine hotel like textured kothu parotta. Use frozen or leftover parotta from the previous day. For getting perfect texture without all the chopping, you can take the parotta in a blender or food processor and pulse few times to get the texture right.
Make sure to use leftover salna or chicken curry for the dish which adds the authentic street style taste.
Also make sure to cook them until the parotta gets crispy and fluffy.

Egg Kothu Parotta Recipe | Muttai Kothu Parotta Recipe
Equipment

Ingredients
- 1 large Onion chopped + extra for topping
- 1 large Tomato chopped
- 2 no Green chillies chopped finely
- 2 tbsp Ginger Garlic paste
- 1 tsp Fennel seeds
- 1 piece Cinnamon
- 1 tbsp Kashmiri Red chilli powder
- 1 tsp Garam masala powder
- 2 large Eggs
- 4 no Parotta
- 1 cup Salna
- Salt to taste
- 3 tbsp Coriander leaves chopped finely
Instructions
- First just tear the paratha in to small pieces by your hands and keep aside.
- In a kadai add oil and crackle some saunf and cinnamon. Add in the onions and green chilli and mix well. Add in the ginger garlic paste and mix well. Now add in the tomatoes and sauté well. Add in all the spices and stir for 1 min. Now crack in the first egg in the masala and mix well.
- Add in the paratha and mix. Then crack in the next egg and mix till the egg are cooked. Pour in the salna(if you have) and combine well, Cook on a slow flame for 5 min.
- Now comes the kothu part of the paratha. Take a sharp edge cup and start smashing the paratha till it becomes small pieces(see image).
- Take it back to the flame and cook it for 5 more mins. Garnish with some chopped coriander and onions. Serve hot with a little squeeze of lemon juice.
