Shahi Pulao
This is my second recipe for shahi pulav. This is one of my all time favorite recipe. I first posted it a year back, since it is my fav, i want it to have a clear pictorial recipe. So here i am with a new post with more pictures. You can check out my old recipe here.
This rice dish has a slight sweetish tingle to it. It is a kind of rich recipe. You can make it in different variation, you can add saffron water in it, you can add veggies to it. I will soon post that. So off you go to the recipe.
Ingredients for Shahi Pulao
- Basmati Rice - 1 cup
- Onions - 1 large sliced thinlyGreen Chilli - 3 large slit
- Ginger Garlic Paste - 2 tblspn
- Salt to taste
- Sugar - 1 tblspn
- Coriander Leaves - a handful
- Mint Leaves - a handful
Water - 1.5 cup
For Seasoning:
- Ghee - 2 tblspn
- Cumin Seeds / Jeerakam - 1 tblspn
- Bay Leaf - 1
- Cinnamon Stick - 1 inch piece
- Cardamom / Yelakai - 4 crushed
- Cloves / Krambu - 4
How to make Shahi Pulao
- Wash and soak the rice for 30 mins.
- Heat ghee in a pressure cooker. Add in all the seasoning ingredients and saute for a while.
- Now add in salt and sugar and mix well. Let them cook for a while.
- Add in onions, green chilli and saute till they turn golden.
- Now add in ginger garlic paste and saute them for a min.
- Now add in the soaked drained rice and mix them well.
- Add in a good amount of coriander and mint leaves.
- Pour in 1.5 cups of water and bring it to a boil. Simmer the flame and pressure cook for 1 whistle. Let it simmer for 5 mins. Switch off the flame and let the steam go all by itself. Fluff the rice with a fork.
- Serve with any curry.
