    Beans Potato Avial Recipe

    In our house probably we will have avial twice a week. Each time amma makes this with different vegetables. Some day she will make tomato avial or drumstick avial or yam avial and many more. Each time the flavours will be completely different and unique.

    About Bean Potato Avial Recipe

    Avial is an Indian dish that originated in the Indian states of Kerala, Tamil Nadu, and Udupi. It's a thick stew of 13 vegetables and coconut from the Western Ghats, seasoned with coconut oil and curry leaves.

    Today I am going to share my mums favorite avial using Beans and Potato. The vegetables are cooked in a spicy green coconut sauce. Totally delicious. I would advice you to make the tempering using coconut oil. Whenever you are making any dish that have some form of coconut in it. Try using coconut oil in that, because that enhances the flavour of the entire dish.

    Ingredients for Beans Potato Avial Recipe

    • Beans-15 cut into a inch size
    • Potato-3 cut into a inch size
    • Turmeric powder-1 tsp
    • Tamarind paste-1 tsp mixed with some water
    • Salt to taste

    Beans :

    They have more distinct colour and flavor think marbled skins, vibrant hues, and flavours ranging from earthy to mushroomy to meaty to nutty.

    Potatoes :

    It was introduced to India by Portuguese sailors in the early 17th century, and British colonists spread its cultivation to North India. The potato is one of the most important commercial crops grown in the country. Potatoes are high in fibre, which can help you lose weight by keeping you fuller for longer. Fibre can help prevent heart disease by
    maintaining healthy cholesterol and blood sugar levels. Potatoes are also high in antioxidants, which help to prevent disease, as well as vitamins, which help your body function properly.

    Turmeric Powder :

    The turmeric root is quite bitter, but has an almost citrusy taste, compared to the powder. Turmeric also has something of a sweet taste, and it is quite earthy. When you use the powder, you're unlikely to notice the texture unless you use a substantial amount, but it is somewhat gritty.

    How to Make Beans Potato Avial

    1. Take beans, potato, turmeric and salt in a kadai.Add ½ cup of water and cook it covered on a low flame..It will take around 15-20 mins.
    2. Take coconut, cumin seeds, green chilli, curry leaves, turmeric in a blender and make it into a fine puree by adding some water..
    3. Now pour this masala into the cooked vegetables and mix well..
    4. Pour in tamarind water and mix well. Cook this for 5 mins..
    5. Now make tempering by heating oil and crackling mustard seeds, cumin seeds and curry leaves.
    6. Pour this over the avial and mix well.
    7. Serve with rice and any gravy.

    Ingredients

    • 15 Beans cut into a inch size

    • For Grinding:
    • 1 cup Fresh Coconut grated
    • 3 Green chilli
    • 1 sprig Curry leaves
    • 1 tsp Cumin seeds
    • 1 tsp Turmeric powder / Manjal podi
    • For Tempering:
    • 1 tbsp Coconut oil
    • 1 tsp Mustard seeds / Kaduku
    • 1 tsp Cumin seeds / Jeerakam
    • 1 sprig Curry leaves

    Instructions

    • Take beans, potato, turmeric and salt in a kadai.Add ½ cup of water and cook it covered on a low flame..It will take around 15-20 mins.

    Beans Potato Avial Recipe with Step by Step

     
    Take all your ingredients.
    Add salt and turmeric to vegetables
    pour in some water
    heat it and bring it to a boil
    cover and simmer
    till the potato is cooked
    Meanwhile take ingredients for masala in a blender
    make it into a fine puree
    pour it in
    bring it to boil
    add some tamarind juice in this and cook for couple more mins
    Make tempering and pour it in..
    The coconut oil smells divine
     
     
    have this with rice

    Avial or Aviyal is a vegetable dish of Kerala that uses green bananas, drumsticks, various soft beans, and fresh coconut gratings," writes Achaya in his book The Illustrated Foods of India. These are cooked in coconut milk before being tossed in aromatic coconut oil and spiced sour curd.

    How did Avial originate?

    Avial is also a seasonal vegetable mash cooked in a simple coconut gravy. According to legend, Avial was created by the great Pandava Bhima during their exile. During The Great Pandava's exile, Bhim disguised himself as a cook "Ballav" in the kitchen of The King of Virata.
