    Crispy Mixed Vegetable Fry

    Crispy Mixed Vegetable Fry with step by step pictures. Mix of vegetables fried in spices till crispy. This goes well with rice or roti.

     
     

    Mixed Vegetables Fry 

    A simple mixed vegetable fry. The most of the flavour for this comes from the crispy curry leaves you add to this. This recipe don’t need lots of spices, the main flavourings is from curry leaves and pepper. Hope you all try this and let me know what you think.

    How to Make Crispy Vegetable Fry

    1. Take a microwave safe bowl, add in potato and cauliflower in it..Sprinkle with a tsp of salt in it. Cover it and microwave on high for about 3 min.Take it out and set aside for a moment.
    2. Add oil in a kadai and let it heat up. Crackle some mustard and cumin seeds in it.
    3. Add in Onion and fry for 1 min. Add in the par cooked potatoes and cauliflower in it and mix well. Season with salt. Cover it and let it cook till it gets golden brown.
    4. In goes in peas and capsicum and fry for 3 min.
    5. Add in coriander powder and garam masala powder and mix well.
    6. Sprinkle with pepper and mix well.
    7. Take a small frying pan add a tsp of oil and fry the curry leaves till it gets crispy.
    8. Throw this crispy curry leaves in to the veggies and toss well.
    9. Serve hot with rice or roti.

    Ingredients

    • Cauliflower-2 cups cut into bite size florets
    • Peas-½ cup
    • Potato-1 large cubed
    • Onion-1 cubed
    • Capsicum-1 cubed
    • Mustard seeds-1 tsp
    • Cumin seeds-1 tsp
    • Coriander powder-1 tblspn
    • Garam masala powder-1 tsp
    • Pepper-1 tblspn or as per taste
    • Salt to taste
    • Oil-1 tblspn
    • Curry leaves-2 springs

    Instructions

    Mixed Vegetables Fry Step by Step

     
    grab your ingredients

     

    Heat oil and crackle in some cumin and mustard seeds
     
     
    add in onions
     
     
    and some potatoes
     
     
    throw in cauliflower
     
     
    cook till everything is cooked and crispy.
     
     
    add in peas and bell pepper
     
     
    add some garam masala powder and
    freshly ground coriander powder
     
     
    add some fresh ground pepper
     
     
    Fry some curry leaves till crispy

     

    add in the fried curry leaves

     

    Toss everything well

     

    You are ready to go
