    Delicious potato dish which can be made in few minutes. The potato curry taste spicy and tangy and packed with full of flavour. Serve it with daal and rice for a perfect lunch.

    HOW TO MAKE JODHPURI ALOO

    • Peel potatoes, chop them. Take it in a kadai. Add salt and cover with water. Cook till potatoes are tender. Drain and set aside.
    • Heat oil in a kadai. Add in the whole spices and seasoning. Let them sizzle.
    • Add in potatoes and salt. Toss them well in the oil. cook for few minutes.
    • Now add in the spice powders and toss well. Cook for 4 to 5 mins.
    • Add in amchoor powder and coriander leaves. Toss well.
    • Serve.

    Notes

    • You can use ghee instead of oil to cook the potatoes.
    • The aloo curry can be served with roti or naan as you like.
    • Add more chilli powder if you need it to be spicy.
    • Instead of amchoor powder you could add some lemon juice in the end.

    Ingredients

    • 2 large Potatoes
    • 2 tablespoon Oil
    • 1 teaspoon Fennel seeds
    • 1 teaspoon Cumin seeds
    • 1 Dry red chilli
    • 1 teaspoon Kalonji / Onion Seeds
    • ¼ teaspoon Asafoetida
    • 2 teaspoon Kashmiri Red Chilli Powder
    • 1 teaspoon Coriander powder
    • 1 teaspoon Turmeric powder
    • 1 teaspoon Amchoor Powder
    • 3 tablespoon Coriander leaves
    • Salt

    Pictorial:

    1)Peel potatoes, chop them, salt them and cook till tender.

    2)Heat oil in a kadai.

    3)Add in fennel seeds and dry red chilli

    4)Add in kalonji / nigella seeds and some cumin seeds

    5)Add a pinch of asaotoetida

    6)Add in boiled potatoes. Toss well

    7)Add little salt.

    8)Cook for 2 to 3 mins.

    9)Add in turmeric, chilli and coriander powder.

    10)Toss well and cook for few minutes.

    11)Add in amchoor powder.

    12)Add in coriander leaves.

    13)Mix well.

    14)Serve
